Filet bean 'Supermètis'

 
 
 
 

Perhaps nothing speaks French among vegetables like the haricot vert. These ultra-slender, tender beans set the standard for green peans, opening up a whole other culinary world from the tasteless, tough, big pods of many supermarket varieties. 'Autan' bears masses of thin, long, flavorful beans for weeks as long as harvest is frequent. Rush them to the kitchen and plunge them into boiling salted water for no longer than 2 minutes. A touch of fresh butter and herbs? Pairing with shell beans, young onions, and fruity olive oil in a summer salad? Choices, choices...

'Supermètis' is an heirloom filet bean with long, delicately thin pods that are full of flavor and perfect for 'haricot vert' use.  A big plus with this variety:  should any of the pods become too mature, let them become semi-dry or dry and use the beans inside as a delicious shellout with melting texture.

Our French heirloom seed is produced organically by a small seed farm in central France. Its production process is monitored by France's rigorous Ecocert program which is a standard throughout the European community. The seed ships with both an Ecocert certificate and a phytosanitary certificate.
