Herbes à pot, or pot herbs, go right to the heart of the potager (French for vegetable garden), which got it's name because that was the place one grew plants for one's potage, or soup.  Composed of a medley of plants that were stalwarts in the French medieval potager, this mixture includes branching cabbage (an ancestor of heading cabbage), mustard, orach, chard, parsley, leaf celery, onion, leek, amaranth, and borage.  Talk about vitamins, minerals, and untold micronutrients!  Sow small amounts at two-week intervals.  Can be cut young as a delicious salad mix, slightly larger for quick sautes, and full grown for potage, of course!  Organic seed.
