Average to dry soils--Wild parsnip

Wild parsnip (Pastinaca sativus) is the wild ancestor from which all modern parsnip cultivars are derived.  This native French plant has delicate umbels of chartreuse flowers followed by highly decorative globe-shaped seedheads.  All parts of the plant are edible and tasty--an excellent addition to the wild salad bowl.  Plant in full sun, fairly rich soil.
